Okay, so I'm pretty dull in my cooking choices. I CAN cook, but I choose really simple meals because they're healthier. For instance, most nights I grill chicken, pair it with a vegetable and maybe a carb such as a wheat roll. I seriously make this three or four times a week. Protein, veggie, carb. See, I'm lame. When I make Tyler lasagna, pasta, or a really filling meal, I don't eat it. Number one reason is because I include my desserts in my daily caloric intake. Healthy? Probably not. But, I love chocolate. With that confession said, I love to bake and they are my most favorite desserts. (Baked goods and chocolate that is.) I make a ton of banana breads and muffins because London enjoys them and I get a healthier dessert than, say, a couple of massive brownies and the chub that goes with them. I found these muffins online on a google site for banana recipes. They are so good that I've made them twice this week with Tyler, London, and me inhaling them. Please try and enjoy. The best part is that there are no eggs or dairy so I let London eat as much batter as she wants. Banana Muffins 3 ripe bananas 1/4 c. oil or melted oleo 1 c. sugar 1 tsp. soda 1 c chopped nuts or raisins (I did chocolate chips!) 1 tsp. salt 2 c. Flour Mix ingredients with a fork and do not overmix. Bake at 350 degrees for about twenty minutes. Since the baking degree and time were not given to me, this was my own guess. ENJOY!!!!

Our New Baby
Our little family is doing great. Madden is a champion eater and gained two pounds in two weeks. He is a good baby during the day but, still struggles at night. Fortunately, Tyler has been home and lets me go to the gym at odd hours after I nurse. It has been so nice to have our little family together. London is now in her big girl room and is adjusting excellently to a new baby and a new room as well as potty training. We are blessed and grateful for two healthy and beautiful children. Motherhood is the best!
